Vacationing While on the Paleo Autoimmune Protocol

Last weekend we joined four other couples at a cabin getaway. It is a tradition for the cabin weekend, that each couple takes two meals to cook for everyone, hopefully reducing the amount of food brought and giving everyone a break from cooking.

Breakfast Day 1

To many this would be great, but of course now being on the Autoimmune Protocol, I did not want to be a burden to anyone with my laundry list of items I can't eat. Luckily, or not, there is one other girl at the cabin that also is Gluten Free, so every did their best to at least make gluten free options. Of course, this would not work for me.

Lunch Day 3

The best way for me to ensure I could eat, and that I would not over indulge and suffer the consequences was to make my own food stash. I made sure there was a great deal of safe proteins, green veggies and snacks to last me for the five day weekend.

Full disclosure, I was not perfect. I did drink a few glasses of wine, and have couple treats or snacks that weren't AIP, but they were at least gluten free at best. It was important not to stress myself out too much trying to be perfect. Everything was of course in moderation, a few bites to see if I would feel too sick. Overall, I am proud of how I handled my first vacation while on AIP.

Food Preparation

For those looking for ideas or just seeing how I did it, here is a picture of all the food I brought for my AIP stash. Below the picture, I outline what everything is and link to the recipes. It turns out, I actually brought way too much food, but rather be over-prepared than under-prepared.
