Easy Sweet Potato Fries (AIP, Paleo, Vegan)

I have been holding out on you guys. This was actually one of the first recipes I meant to post and I completely forgot about until a friend asked me a few days ago for a sweet potato fry recipe.

After many years of buying my sweet potato fries from the frozen section, we were determined to find a healthier and easier option. Yes, opening a bag and putting it on the baking sheet is easy, but what really is in those pre-cut sweet potato fries. Here is the ingredient list from the brand we use to always have in our freezer:

Sweet Potatoes, Canola Oil and/or Sunflower Oil and/or Safflower Oil, Rice Flour, Tapioca Starch, Natural Cane Sugar, Cornstarch, Tapioca Dextrin, Sea Salt, Chili Pepper Powder, Salad Mustard (Distilled Vinegar, Mustard Seed, Salt, Turmeric, Paprika), Xanthan Gum, Gluconic Acid.

Really? Is all the necessary? With just 4 ingredients, it is clear these fries are definitely the better choice.

Ingredients

1 large sweet potato
¼ cup of either Avocado oil, coconut oil, or extra virgin olive oil
Sea salt
Ground Pepper (omit for AIP)

Preparation

  1. Preheat oven to 450 degrees.
  2. Wash sweet potato and peel. You can leave the skin on if you like, but we prefer it off. Cut in to ½ inch thick strips. You can go bigger or small, but try to make sure they are all around the same size so that cook equally.
  3. Put cut sweet potato on baking sheet. Had half the oil on top of the fries. Toss the fries to cover them in oil. Add more if needed. You want them to be completely coated but not soaked in the oil.
  4. Now, spread out the fries. You may need two backing sheets because you want none of the fries to be touching.
  5. Put fries in the oven and cook for 15 minutes.
  6. Take them out and flip them over, I just use my hand to flip each on, remember they need to stay separated.
  7. Place fries back in oven for another 10 minutes at least. If you cut large fries, you may need to go a few minutes longer.
  8. Remove fries from oven and sprinkle with a pinch of sea salt and a few turns of ground pepper (omit for AIP).

  1. Enjoy with your favorite meal. We love to have these with turkey burgers or homemade chicken tenders.
