Fresh Mint Tea (AIP, Paleo, Vegan)

Again, I really am the worse food blogger ever. This summer has flown by and I just let life get in the way, but I have a lot of fun things to share, plus a recipe for a delicious refreshing summer drink.




Fresh Mint Tea


After our amazing shopping trip, my mom sent me home with a bushel of fresh mint. Yes, a bushel! It filled an entire grocery bag. The first thing I thought of was some simple fresh tea. It doesn’t get better than a glass of cold mint tea in the heat of a Mid-Atlantic summer, trust me.



Ingredients

Mint leaves - About 1 ½ cups
Boiling Water - 2 liters
Sugar (optional)

Equipment

Large bowl
Fine mesh strainer or cheese cloth (and rubber band)
Medium pot or electric tea pot
Wooden spoon
Pitcher

Instructions

1. Place strainer and or cheese cloth over big bowl.
2. Pull mint leaves off steams, wash them thoroughly, and put them in strainer


3. Pour boiling water over top of leaves, water should cover leaves.
4. Muddle leaves with wooden spoon.


5. Allow it to brew until the water cools to room temperature. Occasionally use the wooden spoon to muddle leaves.
6. Remove strainer and leaves and pour tea into pitcher or a few mason jars. Should you want to sweeten your tea, this is where you add sugar to your taste. I just love the taste of mint, so no sugar for me. Place into fridge to cool, and then enjoy!

  1. Wow! What a satisfaction!!! Just like you I hardly loose weight and my size goes between plus and normal... recently I strictly return to paleo and fix my old bike... and things are better. I love your story! Mint is one of my favorite herbs. With melon, mint leaves and apple juice I make a fantastic icepop. :-)

I did it all right and I lost nothing or gained weight, it's so important that we find our individual lifestyle that works for our body. So happy to hear things are going well for you! That mint, melon and apple juice ice pop sounds amazing!!
